Something about these cookies signifies Valentine’s Day for me. It could have something to do with my Mom making them around this time of year. They are so simple to make and so good to eat.

Chocolate Valentine Cookies
Cookies:
1/2 cup butter, softened
3/4 cup sugar
1 egg
1 tsp vanilla
1 1/2 cups flour
1/3 cup unsweetened cocoa
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Icing:
1 1/2 cups confectioners sugar
1/2 tsp vanilla
2 TBS butter
2 TBS milk
Red food coloring
Preheat oven to 325 degrees.
Cookies: Cream butter, sugar, egg and vanilla until fluffy. Combine flour, cocoa, baking powder, baking soda and salt. Add to mixture and blend well. Chill dough if too soft to roll. Roll dough to 1/4-inch thickness. Cut with cookie cutter and put on cookie sheet. Bake for 5-7 minutes. Cool 1 minute and then remove to wire rack. Cool before icing.
Icing: Beat sugar, butter, vanilla and milk in a small bowl until smooth and a good spreading consistency. Divide in half. Tint one half light pink and one half dark pink. Ice cookies and allow to dry.

Yes they are yummy and definitely say Valentine’s Day! I suppose they could have said Christmas if Mom made them in Christmas tree shapes or something.
