After trying to figure out what to make for dessert tonight and not really coming up with anything, I decided to try my Mom’s theory. She says if a company puts a recipe on the side of their box, it must be good.
I ventured onto the baking aisle at Publix and noticed that some of the Duncan Hines brownie mixes are 10 for $10 this week. The first one I picked up had what seemed like a wonderful recipe for Easy Brownies and Cream Sandwich Cookies. The recipe was simple, so I decided to give them a go. Once again, my Mom was right. (Why couldn’t I have figured that out sooner in life?!) 🙂
I will definitely make these again, but maybe with some modifications…like ice cream for filling rather than icing. Don’t get me wrong, the icing was delightful, but ice cream could be great too!
1 box Duncan Hines Chewy Fudge Brownie Mix
1/3 cup vegetable oil
2 large eggs
3/4 cup semi-sweet chocolate chunks
3/4 cup semi-sweet chocolate chips
1 16-ounce can Duncan Hines Creamy Home-Style Classic Vanilla Frosting
Preheat oven to 350 degrees. Line cookie sheet(s) with aluminum foil.
In a large mixing bowl, combine brownie mix, oil and eggs with wooden spoon until just blended and all dry ingredients are moistened. Stir in chocolate chips and chocolate chunks.
Drop batter by heaping tablespoons, 2 inches apart, onto cookie sheets.
Bake 11-14 minutes until cracked in appearance and just barely set at center when lightly touched. Cool 1 minute on sheets. Transfer to wire racks and cool completely.
Spread frosting on half the cookies and top with another cookie. Gently press together. Makes 10-12 sandwiches.
