Macaroons

Simple and sweet.

I saw this recipe on Barefoot & Baking and decided to give them a try. Even though I can’t recall the last time I even had a macaroon, they just looked so good. I really like coconut, but if you aren’t a fan this recipe probably isn’t for you. 🙂

They were very simple and tasty. Perfect for a start-of-summer treat.

Macaroons

1 1/3 cups flaked coconut
1/3 cup sugar
2 tablespoons flour
1/8 teaspoon salt
2 egg whites
3/4 teaspoon vanilla
(recipe calls for 1/2 tsp vanilla & 1/4 tsp almond extract, but I’m not a fan of almond extract)

Preheat oven to 325 degrees.

In a small bowl combine coconut, sugar, flour and salt. Add egg whites and vanilla. Mix well. Drop by rounded teaspoonful onto a greased cookie sheet.

Bake at 325 degrees for 18-20 minutes or until golden brown.
