Chocolate Chip Pumpkin Muffins
This recipe has been a staple in my holiday eating for several years. For the last couple of years they have been the Thanksgiving Day breakfast of choice at the beach house. This year is no exception. This afternoon I made miniature muffins, medium-size muffins, extra large muffins and a thin loaf of bread. They are so good. Perfect for breakfast. Or a snack. Or breakfast and a snack.

Chocolate Chip Pumpkin Muffins

1 2/3 cup flour
1 cup sugar
1 TBS pumpkin pie spice
1 tsp baking soda
¼ tsp baking powder
¼ tsp salt
2 large eggs
1 cup plain pumpkin
½ cup butter, melted
1 cup semi-sweet chocolate chips

Heat oven to 350°.

Grease or line muffin cups. Thoroughly mix flour, sugar, pie spice, baking soda, baking powder and salt in large bowl. Mix eggs, butter, pumpkin and whisk until well blended. Gradually stir in flour mixture. Stir in chocolate chips. Scoop batter evenly into muffin cups. Bake 20-25 minutes.
