I saw a post about these somewhere in the blogosphere and knew I needed to try them. Unfortunately, the post I saw them on didn’t provide the recipe. Enter Google. Thank goodness for Google.
These little treats are so good! They are rich, peanut buttery, salty and sweet. They only require a handful of ingredients and they’re simple to make.
I should warn you though…I only got 13 out of one batch. I’ll be tripling the recipe for next weekend’s baby shower!
Chocolate Covered Peanut Butter Pretzel Balls
1/2 cup creamy peanut butter
1/4 cup, plus 1 tbsp confectioners sugar
1 tablespoon unsalted butter, room temperature
1 cup crushed pretzels
chocolate bark (I used 5 squares, and had a little leftover to cover some pretzels!)
Stir together peanut butter, confectioners sugar, unsalted butter and the crushed pretzels. The “stirring” can be a challenge. Use your hands if you need to. Roll into 1″ balls. Freeze for 30 minutes on a cookie sheet.
Melt chocolate. Dip balls into melted milk chocolate and allow to dry on wax paper.
Enjoy!
